Peach and Arugula Pizza With Homemade Sauce
Cup of Jo shared a five ingredient Peach, Arugula, and Burrata Pizza. I’m not one for fruit on pizza, but something about the savory and sweet contrast between the peaches and Balsamic vinegar made me curious to try. I decided to try my hand at making it, but added my own spin. I love the idea of making my own dough, but it’s a process for which I have little patience. I went with a pre-made crust I’ve always wanted to try instead and it tasted just fine.
No burrata cheese for me. It’s the ball shape that throws me off. Nothing beats the standard shredded mozzarella cheese in a bag. Plus, it’s easier to work with and manage. I didn’t measure any of the ingredients before I used them. I just seasoned to taste and used my best judgement. I also made my own tomato sauce. It may sound taxing, but it takes no time. I share my tomato sauce recipe below, but you can always go with a store brand option if you’re pressed for time.
Ingredients
3 medium tomatoes
Avocado Oil Spray
Shredded Mozzarella Cheese
Italian Seasoning Mix
Balsamic Vinegar
Garlic Powder
Salt
Pepper
Fresh Arugula
Fresh Basil
1 Red or white onion (I actually used and love red pickled onions)
1 Green Pepper
1 small peach
Pepperoni (Leave out for a vegetarian friendly pizza)
1 can of Jalapeños (for a spicy addition)
Homemade Tomato Sauce Recipe
Slice each of the 3 medium tomatoes into four sections
Spray your empty blender or food processor with avocado oil spray
Add a dash (or two) of salt, pepper, garlic powder, and Italian seasoning into your empty blender or food processor
Add one of the sliced tomatoes into the blender or food processor and blend for 1 to 2 minutes
Continue this until all 3 sliced tomatoes have been blended together and form a smooth sauce consistency
Add in salt, pepper, garlic powder, and Italian seasoning mix to the tomato sauce and stir with a spoon (season to taste)
Simmer the homemade tomato sauce on the stove in a medium pan on medium heat for 5 to 7 minutes
I store the extra sauce in a Manson Jar. Be sure to add the date the sauce was made to the jar; It typically last for a month;
Peach and Arugula Pizza Recipe
Pre-heat oven to 425 or in accordance to the cooking instructions on the back of the pre-made crust
Spray cooking sheet with avocado oil
Add a dash (or two) of salt, pepper, garlic powder, and Italian seasoning mix to cooking sheet
Lay pre-made crust on cooking sheet and spray with avocado oil
Slice and dice peach, green pepper, basil, and onion
Spread tomato sauce on pre-made crust
Add shredded mozzarella cheese, arugula, peaches, green pepper, onion, basil, pepperoni, and jalapeños
Add a light coating of Balsamic vinegar on top of pizza (a little will go a long way)
Add a dash (or two) of salt, pepper, garlic powder, and Italian seasoning on top of pizza
Cook pizza for 15 to 18 minutes
Take pizza out and let cool for 3 to 5 minutes
Cut into 8 slices and enjoy!
